Troy MacLarty is the chef and owner of Portland’s Bollywood Theater, the beloved Indian street food restaurant he opened on NE Alberta Street in 2012. A graduate of the Culinary Institute of America, MacLarty spent four years cooking at Alice Waters’ legendary Chez Panisse in Berkeley before moving to Portland, where he became part of the city’s emerging farm-to-table movement. His longtime fascination with Indian food eventually led to extensive research and travel throughout India and, ultimately, Bollywood Theater, where regional street foods and deeply layered spices meet the ingredient-driven cooking that has defined his career.
